  4. Get Green Vegetable such as Kale, Spinach, Cabbage, etc. *as required
  5. Take 1/2 tablespoon Oil
  6. Prepare 1 pinch Salt
  7. Get 1 teaspoon Curry Powder
  8. Get 2 tablespoons Sake OR Water
  9. Prepare 1 teaspoon Soy Sauce
  10. Get 1 serving Freshly Cooked Rice

Saman curry or Sardine curry as we Sri Lankans call it commonly is a tinned fish curry. Mostly we use canned Mackerel for this curry. But same recipe can be used with any tinned fish. This authentic mackerel curry is so good!

Instructions to make Curry Mackerel Don:
  1. Drain the Canned Mackerel and remove the brine.
  2. Heat Oil in a frying pan over a medium heat, cook sliced Onion, Garlic and Green Vegetable until onion is transparent. Season with Salt and Curry Powder.
  3. Add Mackerel, Sake and Soy Sauce, simmer over a low heat for a minute or so, and let all well combined.
  4. Half fill a bowl with freshly cooked rice and cover it with the Mackerel mixture.

But same recipe can be used with any tinned fish. This authentic mackerel curry is so good! This light mackerel curry is absolutely delicious! I've tried a lot of mackerel curries like this in India where large kingfish mackerel are usually used. Add coriander, cumin, turmeric, curry leaves, salt and sugar.
